Background Information:
A recent survey of canned albacore tuna in U.S. grocery stores by the Mercury Policy Project showed that one can in twenty exceeded the U.S. Food and Drug Administration (FDA) “action” level of 1.0 ppm mercury—the point at which the FDA takes action against the manufacturer.
Unfortunately, the FDA does not always take action—and most U.S. mass canners of tuna continue to demand the older, larger fish that have been feeding longer and, thus, have naturally accumulated more mercury. These tuna can end up on the shelves of U.S. grocery stores.
What that may mean to you—particularly if you are exposed to high levels of mercury found in fish (swordfish, shark, tuna), drinking water, mercury dental amalgams, inoculations, and more—is a potentially toxic mercury build-up in your body. Carvalho Fisheries, in response to a need for a minimal-mercury canned tuna, began with the assumption that younger, smaller albacore tuna—because they haven’t been feeding as long as older fish—may have significantly lower levels of mercury. This theory was tested and proven true—first in its own lab and later with Oregon State University. See related information below for further details.
Once that was established, Carvalho determined that it would only can tuna with mercury levels at 0.3 ppm or less—more than 2/3 less than what the FDA allows.
At one of its six Pacific Coast docks, Carvalho selects only three-year-old fish—directly from the fishermen who caught it—for its minimal-mercury canned tuna. Testing on these fish shows an average mercury level of 0.15 ppm—half of its standard for minimal-mercury classification.
